I just picked up a very large collection of SS cloth collar tabs and shoulder bars, what is the best way to keep them from aging?

You should consult a textiles conservationist if you are serious about it.

I can tell you though that you want to limit contact with bare skin and probably maintain a relative humidity of 40-50% (can be hard to do if not in a fairly well closed-off/small space), avoid light all together, especially sunlight. If you are to display them, you'd probably want to keep them under UV resistant material. If not for display, you could keep them in archival storage boxes made of special materials to assist in reducing airborne pollutants for not too much money.
